Fathers Day Surprise!


We surprised Russ with tickets to next weekends Rangers/Astro baseball game.  The kids and I had to let the cat out of the bag a week early because Russ started trying to make plans for next weekend. We made this poster I saw on Pinterest but adapted it to give some hints about the surprise. He loved it and the kids had a little too much fun tearing it apart to eat all the candy! Now we are all looking forward to a fun family getaway for Fathers Day!

Dog Bed Project

I saw this on Pinterest and I wanted to find someone to make it for me. We got new living room furniture and I wanted to keep our beagle, Kenzie, off the new sectional. I also want something nice that would look like another piece of furniture in my living room. Well, I decided to tackle the project myself. I started on March 4th with some measurement and the 1st of many trips to Home Depot. They cut all the wood for me there so I kept having to go back to make everything line up. Who knew 1x4s are actually 3 1/2"!



With all my materials together, I got busy screwing (only one burn from the drill, those bits really heat up!) glueing and clamping. Then trim and finishing nails. I worked a little each day between laundry, errands and shuttling the kids to their activities.


After a break from working on it during spring break, I got busy with the sanding, priming, sanding, painting, sanding, painting, glazing, and 3 coats of seal! The finished product is exactly what I envisioned! I can\'t believe I actually built this heavy piece of furniture!



Kenzie is happy and I\'m happy to keep her off my new sofa!
Next phase is having a cushion made. I think I will keep the sewing machine in the closet and take my fabric over to Truman\'s! I did make it the perfect size to use 2 king pillows as the inserts. I figured that would always be east to replace. I will a pic of the finished cushion when it\'s done.

Kellie's Mac and Cheese

We are having family night tonight and I decided to come up with my own Mac and cheese recipe. This will also be my 1st ever blog post! So here goes...

I think this comfort food dish will go great with this ham and some homemade green beans!

Start with a little bacon for drippings and elbow macaroni cooked al dente.

All the makings of a great sauce.

What should I do with the rest of this?! Mommy break!

This sauce takes a little patience.

Swimming in yummy cheesy sauce. And into a 375 oven for 25 minutes.

Sriracha is optional, but a must for me!

Dinner time!


kellie's Mac & Cheese
3 tbs butter
1 tbs bacon drippings
1/4 c flour
1 tsp minced garlic
2 c milk (I used 1%)
1 c miller lite (drink the rest with fresh lime)
Dash of worcheshire sauce
Salt to taste
White pepper to taste
Sprinkle of nutmeg
3 c sharp cheddar cheese shredded
1 c gruyere shredded
1 Tbs flour (toss with shredded cheese before starting sauce)
1 lb elbow macarroni cooked al dente
3/4 c Panko bread crumbs
2 Tbs Parmesan

Preheat oven to 375
Melt butter and drippings. Add garlic and flour and cook 1-2 minutes. Add beer and milk and wisk until bubbling and thickened. add next 4 ingredients. Working in 1/3 c batches add cheese stirring in figure eight until incorporated. Pour sauce over drained noodles and combine. Put all in greased 9x13 dish and top with panko bread crumbs and Parmesan cheese. Bake for 25 minutes. Let sit for 5 minutes before serving. Drizzle with sriracha (optional)
Makes 8 servings.

Oops. Forgot to add the actual macaroni to the nutritional information. Sorry, if it's too good to be true, it probably is. For each serving add:

.2 sat fat
43 carbs
2.5 fiber
.8 sugar
8.1 fiber
